Oct 8, 2008 - i am absolutely sure that the first time i saw this, heston mixes shredded basil with vodka in an 'atomiser' (he sprays it over the pizza and the alcohol evaporates while the basil mist falls on the pizza). have i made this up myself? i haven't seen it since.

How much does that one pizza cost in the end?Like the steak programme where he cooked that meat for 24 hours in a low oven, this may well be the scientific way of getting the very best dish, but who's ever going to bother? We don't all get paid for mucking about full-time in a kitchen-lab. Some of us have other things to do.

Oct 8, 2008 - i made the pizza myself, and it was pretty good. it doesn't take much time to put together. the resting times are the longest, but you don't have to do anything - just wait.then again, i'm on the dole...it doesn't take that long to get the oven hot if you put the grill on as well.steak next!

Oct 8, 2008 - Heston is great but he is way off on the pizza. His dough is not right at all. He makes a lot of other rookie mistakes as well like putting way too much flour on his peel. That will leave too much flour on the bottom of the pizza where it will burn and get bitter at very high temperatures. His dough is bad. A real pizza dough should have nothing but flour, water, salt and yeast. Definitely no sugar and no malt. His dough is much to dry as well and he added wet to dry instead of dry to wet.

Oct 8, 2008 - Ha, shows how little you know. Sugar is never used by good pizzamakers, EVER! Do some reasearch. I am a pizzamaker and can tell you, Heston doesn't really know how to make pizza. The Neapolitan rule is that the dough can contain nothing but flour, water, salt and yeast, period! Look it up. Sugar is used by people thaqt don't know what they are doing.

Oct 8, 2008 - Obviously you don't understand how yeast works. People use sugar to speed up the process but it is a cheat. If you do some reasearch you will find out that great pizzamakers do not use sugar.
