It is an old Germanic language with some hebrew words thrown in. Not all Jews speak it, Spanish, Italian, Greek, Turkish, North African, Middle Eastern and Caucasus Jews and Yemenite Jews do NOT speak it. The reason these Sephardic Jews in this video are speaking it is because it is lucrative (profitable) to entertain Ashkenazi Jews in the Yiddish language.
